They work great as a winter-kill cover, they add diversity to your mix, and bring in beneficial pollinators. Its large leaf surfaces allow the sunflower to capture significant amounts of sunlight which equates to high carbon sequestration. With its large root system, it has the ability to bring subsoil nutrients to the surface while also increasing soil organic matter levels.
